  • Russet potatoes
  • Carrots
  • Crushed cashews
  • Tomato sauce
  • Salt
  • Curry powder
  • Frozen green peas
  • Green bell pepper
  • Red bell pepper
  • Unsweetened full-fat coconut milk

Instructions

  1. Heat oil in a skillet over medium heat.
  2. Sauté diced onion until tender, about 5 minutes.

  4. Stir in cubed potatoes, carrots, crushed cashews, and tomato sauce; combine well.
