  • 2 Tbsp olive oil
  • 3 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 cup chopped yellow onion
  • 3 minced garlic cloves
  • 32 oz vegetable broth
  • 30 oz canned diced tomatoes (with liquid)
  • 3 Yukon gold potatoes, peeled and chopped
  • 1 cup chopped green beans (fresh or frozen)
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 cup frozen corn
  • 1 cup frozen peas

Instructions

  1. In a large pot over medium-high heat, add olive oil, carrots, celery, and onion. Sauté for about 5 minutes until softened.
  2. Stir in minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add vegetable broth, diced tomatoes (with liquid), potatoes, green beans, Italian seasoning, salt, and black pepper. Bring to a boil then reduce heat to simmer for 8–10 minutes until veggies are tender.
  4. Finally, add frozen corn and peas; cook for an additional 2 minutes until heated through.
