- 3 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 cup chopped yellow onion
- 3 minced garlic cloves
- 32 oz vegetable broth
- 30 oz canned diced tomatoes (with liquid)
- 3 Yukon gold potatoes, peeled and chopped
- 1 cup chopped green beans (fresh or frozen)
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 cup frozen corn
- 1 cup frozen peas
Instructions
- In a large pot over medium-high heat, add olive oil, carrots, celery, and onion. Sauté for about 5 minutes until softened.
- Stir in minced garlic and cook for an additional 30 seconds until fragrant.
- Add vegetable broth, diced tomatoes (with liquid), potatoes, green beans, Italian seasoning, salt, and black pepper. Bring to a boil then reduce heat to simmer for 8–10 minutes until veggies are tender.
- Finally, add frozen corn and peas; cook for an additional 2 minutes until heated through.
