Ingredients

  • 1 can Native Forest Hearts of Palm, drained and chopped
  • 4 cups cooked rice (brown or sushi rice)
  • 2 tablespoons mayo
  • 1 teaspoon Old Bay seasoning
  • 1 tablespoon sriracha
  • 1 teaspoon sesame oil
  • 1 cup shredded carrots
  • 1 cup cucumber, shredded or sliced
  • 1 avocado, sliced
  • Cilantro for garnish
  • Extra sriracha
  • Sesame seeds

Instructions

  1. In two bowls, mix the hearts of palm with mayo, Old Bay, and sesame oil for the base. For the spicy version, add sriracha.
  2. Place cooked rice at the bottom of your serving dish.
  3. Layer both fillings on top of the rice.
  4. Add shredded carrots, cucumbers, avocado slices, cilantro, sesame seeds, and drizzle extra sriracha if desired.
  5. Serve immediately or customize further with nori or edamame.
