  • 1 cup salted butter (room temperature)
  • 1 cup powdered sugar
  • 2 cups all-purpose flour
  • 6 tablespoons salted butter (for caramel)
  • 1 cup granulated sugar
  • ½ cup light corn syrup
  • 1 cup heavy whipping cream (divided)
  • 1 teaspoon pure vanilla extract
  • 1 ¼ cups milk or dark chocolate

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a mixing bowl, beat together room temperature butter, powdered sugar, and vanilla until fluffy. Gradually mix in flour until combined. Press dough into the pan evenly.
  3. Bake for about 20 minutes until golden brown. Let cool.
  4. For the caramel layer, combine butter, salt, corn syrup, and granulated sugar in a saucepan over medium heat; stir until boiling and cook for an additional 5 minutes without stirring. Remove from heat and stir in half of the cream and vanilla.
  5. Pour caramel over the cooled shortbread base and let set.
  6. Melt chocolate with remaining cream in a saucepan; pour over the caramel layer once it has set.
  7. Refrigerate until firm before cutting into squares.
