- 20 oz cheese tortellini
- 10 oz cherry tomatoes
- 8 oz Mozzarella pearls
- 1 cup chopped spinach
- 1/4 cup chopped basil
- 1/2 cup olive oil
- 2 tablespoons balsamic vinegar
- 3–4 garlic cloves
- 3/4 teaspoon Italian seasoning
- 1/2 teaspoon salt and pepper
Instructions
- Cook the tortellini in salted boiling water according to package instructions until al dente. Drain using a colander.
- Rinse the tortellini under cool water to stop cooking.
- In a large mixing bowl, combine the cooked tortellini, chopped spinach, halved cherry tomatoes, mozzarella pearls, chopped basil, and minced garlic.
- In a separate bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Pour over the salad mixture and toss well.
- Cover and chill in the refrigerator until ready to serve, then drizzle with balsamic glaze before serving.
