  • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)
  • A pinch of salt
  • 1/2 tsp vanilla extract
  • 2 shots of espresso or instant coffee
  • 250 g mascarpone cheese (room temperature)
  • 240 ml heavy cream
  • 50 g sugar (for topping)
  • Cocoa powder for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8 or 9-inch baking tin with parchment paper.
  2. Melt the chopped dark chocolate and butter in a microwave-safe bowl in intervals, stirring until smooth.
  3. Mix the brown and granulated sugars into the melted chocolate until combined.
  4. Add eggs one at a time, whisking after each addition until fully incorporated.
  5. Sift in the flour and salt; gently fold until just combined.
  6. Pour the batter into the prepared tin, smoothing the top, and bake for 25–30 minutes until a toothpick comes out with moist crumbs.
  7. Poke holes in the brownies while warm and pour espresso over them. Let cool completely before adding the mascarpone topping.
