- 2 (5 oz) cans drained tuna
- 1 medium onion, chopped
- 1/2 stalk celery, chopped
- 1 clove garlic, minced
- 1 tablespoon parsley, chopped
- 3–4 tablespoons mayonnaise
- 3 tablespoons extra virgin olive oil (divided)
- 1/3 cup shredded mozzarella cheese
- Sliced bread
- Butter (softened)
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine drained tuna with onion, celery, garlic, parsley, mayonnaise, olive oil, and mozzarella. Season with salt and pepper; mix until well combined.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil. Butter one side of a slice of bread and place it butter-side down in the skillet.
- Spoon about 2 tablespoons of the tuna salad onto the bread while it cooks.
- Butter another slice of bread on one side and place it on top of the tuna salad with the non-buttered side facing down. Grill until both sides are golden brown and crispy.
