Ingredients

Scale
  • 1.5 pounds boneless skinless chicken thighs
  • 1 lime (juiced)
  • 3/4 teaspoon table salt
  • 3/4 teaspoon ground black pepper
  • 1 (7-ounce) container plain Greek yogurt
  • 5 cloves garlic (minced)
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cayenne

Instructions

  1. Marinate Chicken: Rub chicken thighs with salt, pepper, and lime juice. In a large bowl, mix yogurt, garlic, ginger, cumin, paprika, turmeric, and cayenne. Add chicken to the marinade one at a time, ensuring they are well-coated. Cover and refrigerate for 6 to 24 hours.
  2. Prepare: Preheat your oven's broiler on high or set it to 450°F if not using a broiler. Line a baking sheet with foil or parchment paper. Arrange marinated chicken on the sheet without touching each piece.
  3. Cook: Broil chicken for about 15-20 minutes until the top is dry with some blackened tips. Flip gently using tongs and cook for another 10 minutes until fully cooked through.
