  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1 tablespoon cornstarch (for thickening)

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Top with pineapple chunks.
  3. In a bowl, whisk together soy sauce, brown sugar, apple cider vinegar, garlic, ginger, and red pepper flakes until smooth.
  4. Pour sauce over chicken and pineapple.
  5. Cook on low for 4 to 6 hours until the chicken is tender.
  6. Shred the chicken with forks and mix cornstarch with water; add to the pot to thicken the sauce.
  7. Cook on high for an additional 10–15 minutes before serving.
