- 1/2 tsp nutmeg
- 1 pinch all spice
- 1 tsp salt
- 1/2 cup canola oil
- 1 tsp vanilla extract
- 1 tsp butter
- 2 tbsp pumpkin seeds
- 1/2 tbsp brown sugar
- 2 tbsp granulated sugar for filling
- 2 tsp milk
- 1 tsp flour for filling
- 1/2 tsp vanilla extract for filling
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In one bowl, mix together flour, sugar, baking soda, and spices.
- In another bowl, combine pumpkin, eggs, oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a separate bowl, prepare the cream cheese filling by mixing softened cream cheese with sugar, milk, flour, and vanilla until smooth.
- Fill muffin cups halfway with batter, add a spoonful of cream cheese filling on top, and cover with more batter.
- Top each muffin with pumpkin seeds and brown sugar before baking for about 20 minutes.
