  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter (melted)
  • 1 cup sweet corn kernels (fresh or frozen)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup honey
  • 1/4 cup unsalted butter (softened)

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a mini muffin tin.
  2. In one bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, combine buttermilk, eggs, and melted butter until smooth.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Gently fold in sweet corn and cheddar cheese.
  6. Fill each muffin tin about two-thirds full with batter.
  7. Bake for 12-15 minutes until golden brown; a toothpick should come out clean.
  8. While baking, mix softened butter and honey to create honey butter.
  9. Let poppers cool slightly before drizzling with honey butter.
