  • Fresh herbs (thyme and rosemary)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tbsp olive oil (for searing, optional)
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp fresh parsley, chopped
  • Grated Parmesan cheese

Instructions

  1. Season beef with salt, pepper, garlic powder, and smoked paprika. Optionally sear in olive oil until browned.
  2. Place seasoned beef in the slow cooker and add halved potatoes on top.
  3. In a bowl, mix melted butter, garlic, thyme, rosemary, beef broth, and Worcestershire sauce; pour over the beef and potatoes.
  4. Cover and cook on low for 8 hours or high for 4 hours until tender.
  5. Garnish with fresh parsley and Parmesan cheese before serving.
