  • 2 packs udon noodles
  • 200 g fresh beef, thinly sliced (sirloin or flank steak)
  • 1 white onion, sliced
  • 1 tbsp garlic, minced
  • Chinese cabbage (or leafy greens of your choice)
  • Soy sauce
  • Oyster sauce
  • Sesame oil
  • Fresh ground black pepper

Instructions

  1. Marinate the beef by whisking together garlic, sesame oil, soy sauce, oyster sauce, rice vinegar, and cornstarch slurry. Coat the beef in this mixture and let sit for 10 minutes.
  2. Cook udon noodles in boiling water for 1–2 minutes until slightly loose. Drain and set aside.
  3. In a wok over medium heat, add oil and stir-fry garlic and onions until soft. Add marinated beef and cook for 2–3 minutes until browned.
  4. Prepare the sauce by combining dark soy sauce, oyster sauce, black pepper, water, and potato starch in a bowl. Pour over the beef and simmer until thickened.
  5. Add udon noodles and Chinese cabbage to the wok. Toss gently to coat everything evenly before serving.
