  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine olive oil, garlic, thyme, rosemary, orange zest, orange juice, honey, soy sauce, salt, and pepper.
  3. Place the chicken in a roasting pan and coat it thoroughly with the marinade.
  4. Add the quartered onion around the chicken and pour in the chicken broth.
  5. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C), basting occasionally.
  6. Let the chicken rest for 10-15 minutes before carving.
