  • 2 heads of cauliflower
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ cup olive oil
  • 1 teaspoon chopped parsley (for garnish)

Instructions

  1. Preheat the oven to 500ºF (260ºC).
  2. Remove green leaves from the cauliflower and trim the stem. Cut each head in half lengthwise, then slice into 1½-inch thick 'steaks.'
  3. In a small bowl, mix kosher salt, black pepper, garlic powder, and paprika.
  4. Drizzle olive oil over both sides of each steak; sprinkle the seasoning mixture evenly.
  5. Place steaks on a baking sheet covered with aluminum foil. Roast for 5 minutes covered, then uncover and continue roasting for an additional 16–18 minutes, flipping halfway through until golden brown.
  6. Serve hot garnished with chopped parsley.
