  • 3 large eggs
  • 1 ¼ cups buttermilk
  • ¼ cup vegetable oil
  • 1 can shredded coconut
  • ⅔ cup chopped toasted pecans
  • For frosting: 1 package cream cheese
  • ½ cup butter
  • 1 package powdered sugar
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease three round cake pans.
  2. In a mixing bowl, combine the cake mix, eggs, buttermilk, and oil. Beat with an electric mixer for about two minutes.
