  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Chop vegetables: onion, garlic, bell pepper, and carrot.
  2. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant.
  3. Add bell pepper and carrot; cook until softened.
