  • 15.25 oz box carrot cake mix
  • 15 oz can pure pumpkin
  • 2 Tbsp flour (for streusel)
  • 2 Tbsp brown sugar (for streusel)
  • 1 tsp granulated sugar (for streusel)
  • 1/4 tsp cinnamon (for streusel)
  • 1.5 Tbsp cold butter (for streusel)

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Line a muffin pan with cupcake liners.
  3. 3. In a mixing bowl, combine the carrot cake mix and pure pumpkin, stirring until fully blended.
  4. 4. In another bowl, combine flour, brown sugar, granulated sugar, cinnamon, and cold butter. Mix until crumbly to create the streusel.
  5. 5. Fill each cupcake liner two-thirds full with muffin batter.
  6. 6. Generously sprinkle streusel topping over each filled muffin liner.
  7. 7. Bake for about 20 minutes or until a toothpick inserted comes out clean.
  8. 8. Allow muffins to cool in the pan for five minutes before transferring to a wire rack.
