- 15 oz can pure pumpkin
- 2 Tbsp flour (for streusel)
- 2 Tbsp brown sugar (for streusel)
- 1 tsp granulated sugar (for streusel)
- 1/4 tsp cinnamon (for streusel)
- 1.5 Tbsp cold butter (for streusel)
Instructions
- 1. Preheat your oven to 400°F (200°C).
- 2. Line a muffin pan with cupcake liners.
- 3. In a mixing bowl, combine the carrot cake mix and pure pumpkin, stirring until fully blended.
- 4. In another bowl, combine flour, brown sugar, granulated sugar, cinnamon, and cold butter. Mix until crumbly to create the streusel.
- 5. Fill each cupcake liner two-thirds full with muffin batter.
- 6. Generously sprinkle streusel topping over each filled muffin liner.
- 7. Bake for about 20 minutes or until a toothpick inserted comes out clean.
- 8. Allow muffins to cool in the pan for five minutes before transferring to a wire rack.
