Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine melted butter, pumpkin puree, sugar, egg, and vanilla until smooth.
  3. In a separate bowl, mix flour, pumpkin pie spice, baking powder, and salt. Gradually add to the wet mixture until combined.
  4. Chill the dough in the refrigerator for 25 minutes.
  5. Roll the dough into balls (about 1½ – 2 tablespoons each) and place on a parchment-lined baking sheet.
  6. Bake for about 18 minutes until set but still soft in the center.
  7. For frosting: Beat together cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract.
  8. Once cookies are cooled, frost each cookie generously.
