- 100 grams pumpkin puree
- 530 grams bread flour
- 2 teaspoons fine sea salt
- 1 tablespoon ground cinnamon
- 1/2 tablespoon pumpkin spice
- 1/4 cup sugar
Instructions
- Ensure your active sourdough starter is bubbly. Mix inactive starter with warm water in a bowl.
- Combine pumpkin puree, all-purpose flour, and sugar in the bowl with mixed starters, then add remaining filtered water to form a shaggy dough.
- Stir in bread flour, sea salt, cinnamon, and pumpkin spice until no dry bits remain.
- Knead on a floured surface for about 5 minutes until smooth. Let rise covered in a warm spot for about 3 hours until doubled.
