  • 1 teaspoon salt
  • 2 large eggs
  • ¼ cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. In one bowl, mix chopped pecans with sugar, corn syrup, vanilla extract, brown sugar, and salt for the cream cheese filling.
  3. In another bowl, whisk together flour, baking powder, pumpkin pie spice, cinnamon, sugar, brown sugar, and salt.
  4. In a separate bowl, combine pumpkin puree, melted butter, eggs, milk, and vanilla extract until smooth.
  5. Gradually incorporate wet ingredients into dry ingredients; stir gently until just combined.
  6. Fill muffin cups halfway with batter. Add a spoonful of cream cheese filling to each cup and top with more batter.
