  • ½ cup (64g) cake flour
  • 1 cup (210g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon nutmeg
  • 2 large eggs (at room temperature)
  • ⅔ cup (120g) vegetable or canola oil
  • 1 cup (240g) pumpkin puree
  • 1 cup (112g) powdered sugar
  • 2 teaspoons milk
  • 1 teaspoon maple flavoring

Instructions

  1. Preheat oven to 425°F and prepare muffin pan with liners or cooking spray.
  2. In a bowl, mix flour, sugars, baking powder, baking soda, salt, and spices.
  3. In another bowl, whisk eggs, melted butter, oil, and pumpkin puree until combined.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Fill muffin tins halfway with batter; sprinkle with cinnamon sugar mixture. Top with more batter and streusel.
  6. Bake for 5 minutes at 425°F; lower temperature to 350°F and bake for an additional 15-17 minutes until golden brown.
