  • 1.3 lbs ground turkey (extra lean)
  • 6 small links chicken maple sausage
  • 1 sweet onion, chopped
  • 3 cloves garlic, minced
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 can cannellini beans (15.5 oz), drained and rinsed
  • 1 can red kidney beans (15.5 oz)
  • 1 can pumpkin purée (29 oz)
  • 1 can diced tomatoes (28 oz)
  • 12 fl oz pumpkin beer
  • 1/2 cup chicken broth
  • Spices: chili powder, oregano, cumin, brown sugar, cayenne pepper

Instructions

  1. Slice the chicken sausage and reserve with the ground turkey.
  2. In a large pot, heat olive oil and sauté onion and garlic until translucent; add bell peppers and cook for another 5 minutes.
  3. Brown the ground turkey and sausage in the same pot for about 10 minutes; season with salt and pepper.
  4. Combine sautéed vegetables, diced tomatoes, pumpkin purée, beans, spices, pumpkin beer, and broth with the meats in the pot.
  5. Simmer on low heat for 1.5 to 2 hours, stirring occasionally.
  6. Serve hot topped with cheese, green onions, and sour cream.
