- 1.3 lbs ground turkey (extra lean)
- 6 small links chicken maple sausage
- 1 sweet onion, chopped
- 3 cloves garlic, minced
- 1 yellow bell pepper, diced
- 1 orange bell pepper, diced
- 1 can cannellini beans (15.5 oz), drained and rinsed
- 1 can red kidney beans (15.5 oz)
- 1 can pumpkin purée (29 oz)
- 1 can diced tomatoes (28 oz)
- 12 fl oz pumpkin beer
- 1/2 cup chicken broth
- Spices: chili powder, oregano, cumin, brown sugar, cayenne pepper
Instructions
- Slice the chicken sausage and reserve with the ground turkey.
- In a large pot, heat olive oil and sauté onion and garlic until translucent; add bell peppers and cook for another 5 minutes.
- Brown the ground turkey and sausage in the same pot for about 10 minutes; season with salt and pepper.
- Combine sautéed vegetables, diced tomatoes, pumpkin purée, beans, spices, pumpkin beer, and broth with the meats in the pot.
- Simmer on low heat for 1.5 to 2 hours, stirring occasionally.
- Serve hot topped with cheese, green onions, and sour cream.
