Ingredients

  • Yellow cake mix (15 oz)
  • Pumpkin puree (15 oz)
  • Pumpkin pie spice (1 tsp)
  • Unsalted butter (½ cup)
  • Cream cheese (4 oz)
  • Powdered sugar (1 ½ cups)
  • Orange candy melts (12 oz)
  • Chocolate candy melts (6 oz)
  • Vegetable shortening (3 Tbsp)

Instructions

  1. Preheat your oven according to cake mix instructions. In a mixing bowl, combine yellow cake mix, pumpkin puree, pumpkin pie spice, and softened butter. Mix until smooth.
  2. Pour batter into a greased cookie sheet and bake as directed until a toothpick comes out clean. Allow to cool completely.
  3. For frosting, beat cream cheese, vanilla extract, and powdered sugar until smooth. Crumble cooled cake into a large bowl and mix with half of the frosting until well combined.
  4. Roll mixture into 1-inch balls and chill for 30 minutes on a lined cookie sheet.
  5. Melt orange candy melts with shortening in a microwave-safe bowl. Dip lollipop sticks in the melted candy before inserting into each ball for stability.
  6. Dip each ball into the melted candy melts, allowing excess to drip off before placing back on parchment paper to set.
