  • 1 lb hot Italian sausage (or lean ground beef/turkey)
  • 1 small yellow onion, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 46 garlic cloves, minced
  • 28 oz can crushed tomatoes
  • 14.5 oz can fire-roasted diced tomatoes
  • 3/4 cup uncooked long-grain white rice
  • Fresh herbs (basil, oregano, parsley)
  • 6 cups low-sodium beef broth
  • Shredded mozzarella and grated Parmesan cheese for serving

Instructions

  1. In a large soup pot over medium-high heat, brown the sausage and chopped onion for about 4 minutes.
  2. Add the red and green bell peppers, garlic, and red pepper flakes; sauté for another 2–3 minutes.
  3. Stir in crushed tomatoes, fire-roasted tomatoes, rice, herbs, broth, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer covered for about 8–12 minutes until rice is cooked.
  5. Stir in Parmesan cheese; adjust seasoning as needed.
  6. Serve hot topped with shredded mozzarella.
