  • 16 baby yellow potatoes
  • 4 tablespoons unsalted butter (melted)
  • 1.5 teaspoons garlic powder
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt (to taste)
  • ½ cup grated Parmesan cheese
  • ½ cup plain yogurt
  • 1 teaspoon olive oil
  • Fresh dill (to taste)

Instructions

  1. Boil the baby potatoes in salted water until tender (15-20 minutes). Drain and let cool.
  2. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. In a bowl, mix melted butter, Parmesan cheese, garlic powder, Italian seasoning, and salt.
  4. Transfer boiled potatoes to the baking sheet; smash each potato gently with a flat object.
  5. Coat each smashed potato with the butter mixture.
  6. Bake for about 30 minutes or until golden brown and crispy.
  7. For the yogurt sauce, combine yogurt, olive oil, salt, and fresh dill in another bowl.
