  • 4 skinless boneless chicken thighs
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • 1 1/2 tsp tomato puree
  • 1 tsp salt
  • 2 large garlic cloves
  • 200g fresh pineapple chunks
  • 1 small shallot
  • juice of 1 lime, plus extra wedges for serving
  • small handful fresh coriander, roughly chopped
  • 1 ripe avocado, cubed
  • 8 small corn or flour tortillas

Instructions

  1. In a medium bowl, whisk together chipotle paste, honey, tomato puree, salt, and crushed garlic. Cut chicken into bite-sized pieces and coat with marinade.
  2. Preheat your oven to 200 degrees Celsius (400 degrees Fahrenheit). Spread marinated chicken on a baking tray and top with pineapple chunks. Roast for about 30 minutes until chicken is cooked through.
  3. While roasting, prepare toppings: chop shallot and cube avocado.
  4. Once done, squeeze lime juice over the tray contents and toss with shallots. Serve in warm tortillas topped with coriander and avocado.
