  • 2 lb boneless, skinless chicken breasts
  • 1/3 cup balsamic vinegar
  • 2 Tbsp honey
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 2 garlic cloves, minced
  • 2 Tbsp avocado oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, whisk together balsamic vinegar, honey, minced garlic, and seasoning. Set aside.
  3. Season chicken breasts with salt and pepper. Heat avocado oil in an oven-safe skillet over medium-high heat and sear the chicken until golden brown.
  4. Pour the balsamic sauce over the chicken and add halved grape tomatoes and mozzarella on top.
  5. Transfer the skillet to the oven and bake for 18-23 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  6. Let it rest for 5 minutes before serving.
