- 1/2 cup Unsalted Butter
- 6 cups Sugar (divided)
- 1 teaspoon Vanilla Extract
- 1/4 teaspoon Baking Soda
- 1 1/2 cups Walnuts or Pecans (chopped)
Instructions
- Lightly grease a 9×13-inch baking dish.
- In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat for about 20 minutes until liquefied.
- In a large saucepan, combine the remaining 4 cups of sugar and 2 cups of heavy cream; simmer on low heat.
- Once the first batch of sugar is melted, pour it into the cream mixture while stirring continuously.
- Increase heat to medium and cook until the mixture reaches 244°F (softball stage).
- Remove from heat; stir in baking soda, butter, and vanilla extract until smooth.
- Allow to rest for about 20 minutes; then stir in chopped nuts.
- Transfer to the prepared baking dish, let cool for 1-2 hours, slice into squares, and enjoy!
