  • 2 2/3 cups all-purpose flour
  • 1 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 3 large eggs (room temperature)
  • 4 cups powdered sugar
  • 1 cup white chocolate chips
  • Heavy cream

Instructions

  1. Preheat your oven to 350°F (180°C). Line three 8-inch cake pans with parchment paper.
  2. In a pot, bring water to a boil and add oats; let sit covered for 20 minutes. Cool before using.
  3. Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a bowl.
  4. Beat butter and sugars until fluffy; mix in eggs, sour cream, and cooled oats.
  5. Gradually fold in the dry ingredients until just combined.
  6. Divide batter among the prepared pans and bake for 20–22 minutes. Cool completely.
  7. Prepare buttercream frosting by beating softened butter and gradually adding powdered sugar.
  8. Layer the cooled cakes with frosting in between each layer and frost the outside.
  9. Create the white chocolate glaze by heating heavy cream and pouring over melted chocolate chips until smooth. Drizzle over the frosted cake.
