- 3 Tablespoons (44g) very hot water
- 1/4 cup strawberry reduction
- 1 cup (240g) heavy cream
- 1/4 cup (29g) powdered sugar
- 1 teaspoon (4g) vanilla
- 3 sticks (339g) unsalted butter, softened
- 7 cups (805 g) confectioners sugar
- 1/3 cup (72g) milk or cream
- 4 oz. dark chocolate chips or semi-sweet chocolate
- 4 oz. heavy cream
Instructions
- Preheat oven to 350°F (175°C) and grease three 8-inch round cake pans.
- Prepare strawberry reduction by simmering pureed strawberries until thickened.
- Mix dry ingredients: cake flour, baking powder, baking soda, and salt in one bowl.
- In another bowl, combine buttermilk, vegetable oil, and vanilla.
- Cream softened butter and sugar until fluffy; gradually add eggs.
- Alternate adding dry mixture and wet mixture to the creamed butter.
- Divide batter into three bowls; mix cocoa powder with hot water for chocolate layer and strawberry reduction for the strawberry layer.
