- 1/2 cup shredded coconut
- 1/2 cup chopped walnuts
- 1 cup grated zucchini (drained)
- 2 cups grated carrots
- 1/2 cup unsweetened applesauce
- 1/2 cup maple syrup
- 3 large eggs
- 1/2 cup avocado oil
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F and line muffin tins with paper liners.
- In a large bowl, whisk together the dry ingredients: sugar, flour, cinnamon, baking soda, salt, coconut, and walnuts.
- Stir in the grated zucchini and carrots until well combined.
