  • 1 cup shredded Monterey Jack cheese
  • 1 medium yellow onion
  • 3 garlic cloves
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Seasonings: paprika, Italian seasoning, salt, black pepper
  • Fresh parsley (for garnish)

Instructions

  1. Cook the spaghetti according to package instructions until al dente; drain and set aside.
  2. In a large skillet over medium heat, heat olive oil. Season chicken pieces with paprika, Italian seasoning, salt, and pepper. Cook for 5-7 minutes until golden brown and fully cooked; remove from skillet.
  3. In the same skillet, melt butter over medium heat. Add chopped onion; cook for 3-4 minutes until softened. Stir in minced garlic; cook for another 30 seconds.
  4. Pour in chicken broth and heavy cream; stir well and bring to a gentle simmer. Allow it to thicken slightly for about 5 minutes.
  5. Add cooked spaghetti and chicken back into the skillet; toss to coat everything in the sauce.
  6. Sprinkle shredded cheese evenly over the mixture; cover for 2-3 minutes until cheese melts.
  7. Garnish with fresh parsley before serving.
