Ingredients

  • 85 grams jelly crystals
  • 125 mls cream (for jelly)
  • 12 pieces Tiramisu sponge fingers
  • 1/2 cup port, sherry, or juice
  • 1 1/2 cups custard
  • 400 grams mixed berries (strawberries, raspberries, blackberries)
  • 200 mls thickened cream (for topping)
  • 1 teaspoon custard powder

Instructions

  1. Prepare the jelly following package instructions and fill dessert glasses with the mixture. Chill until set.
  2. Combine remaining jelly with cream once it's close to setting and mix well. Layer this flummery over the chilled jelly.
  3. Crush sponge fingers and soak in port or juice before layering on top of the flummery.
  4. Add custard over the sponge layer followed by fresh berries.
  5. Whip thickened cream with custard powder until stiff peaks form and pipe on top of each trifle. Garnish with berries and mint leaves.
