Ingredients

Scale
  • 2 cups white granulated sugar
  • 3 large eggs
  • 1 egg yolk
  • 1/2 cup unsalted butter (melted)
  • 2 tsp pure vanilla extract
  • 1/2 cup oil (canola or vegetable)
  • 3/4 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 1/2 TBSP cornstarch
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup marshmallow fluff

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare a 9×9-inch baking pan with nonstick spray and parchment paper.
  2. In a medium bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
  3. In a mixer bowl, beat sugar, eggs, and egg yolk on high speed until pale (about five minutes). Add melted butter, oil, and vanilla; mix on low until combined.
  4. Gradually add dry ingredients until just combined. Fold in chocolate chips with a rubber spatula.
  5. Spread batter into the prepared pan. Melt marshmallow fluff in the microwave for 20-30 seconds; dollop on top and swirl lightly with a butter knife.
  6. Bake for 45-55 minutes until a toothpick comes out slightly wet but not covered in batter. Cool completely before cutting.
