  • 4 salmon fillets
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper, to taste

Instructions

  1. Prepare the ingredients by chopping tomatoes and mincing garlic.
  2. Heat olive oil and 1 tablespoon butter in a large skillet over medium heat.
  3. Season salmon with salt and pepper; cook skin-side down for 5-6 minutes until golden brown. Flip and cook for another 5-6 minutes until cooked through.
  4. Remove salmon; in the same skillet, sauté garlic in remaining butter for about 30 seconds. Add sun-dried tomatoes, cream, broth, Parmesan, thyme, and basil; simmer until thickened (3-5 minutes).
  5. Return salmon to coat in sauce; serve immediately garnished with fresh parsley.
