Ingredients

  • 4 cups Water
  • 2 tbsp Kashmiri green tea (or other green tea)
  • 1/2 tsp Baking soda
  • 12 Star anise
  • 2 Cardamom pods (crushed)
  • 1 Cinnamon stick
  • 1/4 tsp Salt
  • 2 cups Whole milk
  • Sugar or honey to taste

Instructions

  1. In a saucepan, bring water to boil; add green tea leaves and boil for about 5 minutes.
  2. Stir in baking soda; continue boiling for another 2 minutes until the water turns deep red.
  3. Add star anise, crushed cardamom pods, and cinnamon stick; boil for an additional minute.
  4. Reduce heat and simmer for 20-30 minutes until reduced by half.
  5. Stir in salt; then add whole milk while increasing heat to return to a boil.
  6. Strain the chai into cups to remove spices and leaves.
  7. Sweeten with sugar or honey as desired; garnish with crushed nuts if using.
  8. Serve hot and enjoy!
