  • 2 boneless skinless chicken breasts
  • 8 cups chicken broth
  • 4 celery stalks, chopped
  • 4 carrots, peeled and chopped
  • 1/2 onion, diced
  • 2 cups egg noodles
  • 1/4 teaspoon dried thyme leaves
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 Bay Leaves
  • 2 cups water

Instructions

  1. In a large stock pot or Dutch oven, combine chicken breasts, chicken broth, celery, carrots, and onions. Bring to a boil then reduce heat and cover.
  2. Cook until chicken is fully cooked (about 20-30 minutes). Shred the chicken using two forks and return to the pot.
  3. Stir in thyme leaves, minced garlic, salt, pepper, bay leaves, egg noodles, and water.
  4. Cook for another 10 minutes over medium-high heat until noodles are tender.
  5. Remove bay leaves and serve warm.
