  • 1 tbsp cornstarch
  • 2 tbsp butter
  • 2 cloves garlic
  • 2 cups fresh spinach (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup sun-dried tomatoes
  • 1/2 cup freshly grated parmesan cheese
  • Salt and pepper to taste
  • Pasta of choice (e.g., Barilla protein +)

Instructions

  1. Preheat a nonstick pan over medium heat.
  2. Cut the salmon into four portions for even cooking.
  3. Add olive oil to the hot pan, place the salmon skin-side down, and sear for 3-4 minutes until golden brown.
  4. Remove the salmon; melt butter in the same pan, then sauté minced garlic until fragrant.
