  • pounds boneless, skinless chicken strips
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano
  • 2 ears sweet corn
  • 1 medium avocado
  • ½ cup salsa
  • ½ cup sour cream
  • 1 medium red bell pepper
  • ½ medium red onion
  • 1 cup grape tomatoes
  • 2 medium jalapenos
  • 1 handful fresh cilantro

Instructions

  1. Cook the rice: Rinse rice until water runs clear. Combine with 3 cups water and a pinch of salt in a saucepan. Bring to boil, then reduce heat, cover, and simmer for 18 minutes. Stir in lime juice and cilantro.
  2. Marinate the chicken: Mix olive oil, chili powder, salt, black pepper, garlic powder, and oregano in a bowl. Add chicken strips and coat evenly; let marinate for at least 10 minutes.
  3. Grill the chicken: Preheat grill to medium-high heat. Grill chicken for 6-7 minutes per side until cooked through (internal temp 165°F). Slice after resting.
  4. Assemble bowls: Warm tortillas on the grill. Layer rice as the base in each bowl; add sliced chicken and desired toppings.
