  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley

Instructions

  1. Cook the rigatoni in a large pot of salted boiling water until al dente. Reserve ½ cup pasta water, drain the rest, and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt, pepper, and Italian seasoning; sear for 5-7 minutes until golden brown. Remove the chicken from the pan.
  3. In the same skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds before pouring in chicken broth; simmer for 2 minutes.
  4. Stir in heavy cream and let it thicken slightly (3-4 minutes). Mix in Parmesan cheese until smooth; adjust consistency with reserved pasta water if needed.
  5. Return the chicken to the skillet and combine with sauce before adding rigatoni; toss gently to coat.
  6. Garnish with fresh parsley and serve warm.
