Ingredients
- 2 servings dry instant ramen noodle cakes (or other noodles)
- 10 oz extra firm tofu or veggies/mushrooms
- 1 cup water (or vegetable broth)
- 5–7 tbsp soy sauce
- 1.5 tsp dark soy sauce (optional)
- 2–3 tbsp corn starch
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- Minced garlic (optional)
Instructions
- Mix all sauce ingredients until well combined and set aside.
- Boil water in a pot, add noodles, and cook until chewy (2-3 minutes less than package instructions).
- While noodles cook, sauté veggies and tofu in a non-stick pan over medium heat until cooked.
- Add the sauce to the pan with the sautéed ingredients and simmer for 2-3 minutes.
- Drain noodles and mix them into the pan with the sauce until well-coated; cook for an additional 3 minutes.
- Serve hot, garnished with sesame seeds and chopped scallions.
