  • 1/2 white onion, chopped
  • 1 tsp minced chipotle pepper
  • 1 tsp granulated garlic powder
  • 2 tsp pumpkin pie spice
  • 1 tsp kosher salt
  • 1 (15 oz) can pumpkin puree
  • 6 cups chopped sweet potato
  • 1 quart vegetable broth
  • 2 tbsp fresh lemon juice
  • 1 tbsp maple syrup
  • ⅓ cup canned coconut milk

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion until translucent (3–4 minutes). Add chipotle pepper, garlic powder, pumpkin pie spice, and salt; cook for another minute.
  2. Stir in pumpkin puree and sweet potatoes; add vegetable broth and mix well.
  3. Bring to a boil, then reduce heat to low. Cover and simmer for about 20 minutes or until sweet potatoes are tender.
  4. Blend the soup until smooth using an immersion blender.
  5. Stir in lemon juice, maple syrup, and coconut milk. Adjust seasoning as needed.
  6. Serve warm, garnished with toppings of your choice.
