- 6 cups chopped sweet potato
- 1 quart vegetable broth
- 2 tbsp fresh lemon juice
- 1 tbsp maple syrup
- ⅓ cup canned coconut milk
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion until translucent (3–4 minutes). Add chipotle pepper, garlic powder, pumpkin pie spice, and salt; cook for another minute.
- Stir in pumpkin puree and sweet potatoes; add vegetable broth and mix well.
- Bring to a boil, then reduce heat to low. Cover and simmer for about 20 minutes or until sweet potatoes are tender.
- Blend the soup until smooth using an immersion blender.
- Stir in lemon juice, maple syrup, and coconut milk. Adjust seasoning as needed.
