Ingredients

  • 1 kg fresh tomatoes (preferably Roma, quartered)
  • 1 large onion (diced)
  • 3 garlic cloves (minced)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 liter chicken or vegetable broth
  • Optional: 240 ml heavy cream, salt and pepper to taste, fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. On a baking sheet, place the quartered tomatoes; drizzle with olive oil and sprinkle with smoked paprika, salt, and pepper. Toss to coat.
  3. Roast for 25–30 minutes until caramelized and tender.
  4. In a large pot over medium heat, sauté diced onions and minced garlic until translucent (about 5–7 minutes).
  5. Add roasted tomatoes (with juices) to the pot along with the broth; stir well.
  6. Blend the mixture until smooth using a blender or immersion blender.
  7. If desired, stir in heavy cream for added richness and heat through without boiling.
  8. Serve in bowls garnished with fresh basil leaves.
