- 1 kg fresh tomatoes (preferably Roma, quartered)
- 1 large onion (diced)
- 3 garlic cloves (minced)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 liter chicken or vegetable broth
- Optional: 240 ml heavy cream, salt and pepper to taste, fresh basil leaves for garnish
Instructions
- Preheat your oven to 200°C (400°F).
- On a baking sheet, place the quartered tomatoes; drizzle with olive oil and sprinkle with smoked paprika, salt, and pepper. Toss to coat.
- Roast for 25–30 minutes until caramelized and tender.
- In a large pot over medium heat, sauté diced onions and minced garlic until translucent (about 5–7 minutes).
- Add roasted tomatoes (with juices) to the pot along with the broth; stir well.
- Blend the mixture until smooth using a blender or immersion blender.
- If desired, stir in heavy cream for added richness and heat through without boiling.
- Serve in bowls garnished with fresh basil leaves.
