  • 2 large chicken breasts
  • 1 can black beans (drained and rinsed)
  • 1 can corn (undrained)
  • 10 oz can Rotel tomatoes with green chilis (undrained)
  • 1 packet ranch seasoning
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • ½ cup water
  • 8 oz cream cheese

Instructions

  1. Spray the bottom of the crockpot with nonstick cooking spray.
  2. Place chicken breasts at the bottom.
  3. Add black beans, corn, Rotel tomatoes, ranch seasoning, cumin, chili powder, onion powder, and water. Mix well.
  4. Place cream cheese on top without mixing.
  5. Cover and cook on low for 6 to 8 hours or high for 4 hours until chicken is cooked through.
  6. Shred chicken in the pot and serve hot with desired toppings.
