  • 4 pounds yellow potatoes
  • 2 tablespoons kosher salt
  • 1/2 teaspoon baking soda
  • ¼ cup duck fat (or olive oil)
  • 1 whole head of garlic
  • 1 tablespoon finely chopped fresh rosemary
  • Flaky sea salt for finishing

Instructions

  1. Preheat your oven to 450°F, placing a large roasting pan inside to heat.
  2. Rinse potatoes under cold water, boil in a large pot with kosher salt and baking soda until fork-tender (about 25 minutes). Drain and let dry.
  3. Heat duck fat in the preheated roasting pan until melted.
  4. Roughen the edges of the potatoes by shaking them in the colander, then add to the roasting pan. Season and nestle in the garlic.
  5. Roast for 55–60 minutes, tossing every 20 minutes until crispy and golden brown.
  6. Mash roasted garlic cloves with rosemary and olive oil, then toss this mixture with the potatoes before roasting for an additional five minutes.
  7. Adjust seasoning with flaky sea salt and serve.
