Ingredients
- 4 pounds yellow potatoes
- 2 tablespoons kosher salt
- 1/2 teaspoon baking soda
- ¼ cup duck fat (or olive oil)
- 1 whole head of garlic
- 1 tablespoon finely chopped fresh rosemary
- Flaky sea salt for finishing
Instructions
- Preheat your oven to 450°F, placing a large roasting pan inside to heat.
- Rinse potatoes under cold water, boil in a large pot with kosher salt and baking soda until fork-tender (about 25 minutes). Drain and let dry.
