  • 3 cups cooked shredded chicken
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 small onion
  • 2 cloves garlic
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 12 small flour tortillas

Instructions

  1. In a skillet over medium heat, melt butter and sauté diced onion until translucent. Add minced garlic and cook for an additional minute.
  2. Stir in shredded chicken and spices (cumin, chili powder, smoked paprika, salt, pepper). Mix well.
  3. In the same skillet, whisk together melted butter and flour until smooth. Gradually add chicken broth while whisking continuously until thickened. Stir in sour cream and diced green chilies; season with garlic powder and onion powder.
  4. Preheat oven to 350°F (175°C). Spread a thin layer of sauce on the bottom of a baking dish. Fill tortillas with chicken mixture, roll tightly, and place seam-side down in the dish. Pour remaining sauce over enchiladas, top with extra cheese.
  5. Bake for about 25 minutes or until bubbly and golden.
