  • ½ small onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup heavy cream (or half-and-half)
  • ¼ cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup white or brown rice
  • 2 cups chicken broth or water
  • ½ teaspoon salt
  • 2 tablespoons chopped fresh parsley
  • Extra Parmesan cheese

Instructions

  1. Cook the rice in a medium saucepan with broth or water until tender.
  2. Season chicken with garlic powder, paprika, salt, and pepper; sear in a large skillet until golden brown.
  3. Prepare the creamy sauce by sautéing onions and garlic in the same skillet; add broth, cream, and cheese.
  4. Return chicken to the skillet, spoon sauce over it, cover, and simmer until fully cooked.
  5. Serve over rice garnished with parsley.
