Ingredients

  • 4 large ears of fresh corn
  • 1 ½ cups diced bell pepper (red and green)
  • 1 pint halved cherry tomatoes
  • 1 cup diced English cucumber
  • ½ cup finely diced red onions
  • ⅓ cup chopped fresh cilantro
  • ¾ cup Cotija cheese
  • Dressing: avocado oil, lime juice, red wine vinegar, honey, Dijon mustard, salt, dried parsley, black pepper, cumin, garlic powder, chili powder

Instructions

  1. Shuck the corn and boil in water for about 5 minutes until tender. Allow to cool before cutting off kernels.
  2. Dice the bell peppers, cherry tomatoes, cucumber, red onions, and cilantro; combine in a mixing bowl.
  3. In a separate bowl, whisk together the dressing ingredients until well combined.
  4. Add cooled corn to the vegetable mix and pour the dressing over it. Toss gently to coat evenly.
  5. Chill for at least 30 minutes before serving for best flavor.
