Ingredients
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 2 teaspoons ground cloves
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon ground nutmeg
- 2 cups white sugar
- 1 cup light brown sugar
- 1 cup vegetable oil
- 4 large eggs, beaten
- 1 (15 oz) can pureed pumpkin
- 2/3 cup water
- 2–4 tablespoons pepitas (green pumpkin seeds), chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together both sugars, vegetable oil, beaten eggs, and pureed pumpkin until well combined. Add water and stir until smooth.
- In another bowl, whisk together flour, baking soda, salt, cloves, pumpkin pie spice, and nutmeg until lump-free.
- Pour the wet mixture into the dry ingredients and gently combine until just mixed; some lumps are fine.
- Pour batter into two greased loaf pans and sprinkle with chopped pepitas.
- Bake for about 60 minutes or until a toothpick inserted comes out clean.
- Allow to cool in the pans before transferring to wire racks to cool completely.
