  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 2 teaspoons ground cloves
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 2 cups white sugar
  • 1 cup light brown sugar
  • 1 cup vegetable oil
  • 4 large eggs, beaten
  • 1 (15 oz) can pureed pumpkin
  • 2/3 cup water
  • 24 tablespoons pepitas (green pumpkin seeds), chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together both sugars, vegetable oil, beaten eggs, and pureed pumpkin until well combined. Add water and stir until smooth.
  3. In another bowl, whisk together flour, baking soda, salt, cloves, pumpkin pie spice, and nutmeg until lump-free.
  4. Pour the wet mixture into the dry ingredients and gently combine until just mixed; some lumps are fine.
  5. Pour batter into two greased loaf pans and sprinkle with chopped pepitas.
  6. Bake for about 60 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool in the pans before transferring to wire racks to cool completely.
